One thing I'm having trouble with is understanding how the Lord Jesus is FAR
ABOVE ALL THINGS, yet we with Him?
I'm not sure if I understand the context of this question, but when Jesus
ascended into heaven he ascended in stages (as you probably know). He ascended
into the clouds, then into that place above the brightness of the sun, then
into that place FAR ABOVE ALL. This is in my view, the place at the right hand
of God the Father in the 3rd heaven. We are joined to Him when He comes back
down into that place above the brightness of the sun, that place from which
the "Shout" will go out for us to meet with Him in the rapture. So, in the
context of how the Lord Jesus is FAR ABOVE ALL THINGS, it is the place He
occupies right now, at the right hand of God.

And then seeing Him AS THE LAMB in Rev.5 and trying to see how the transition happens. Will we see that scene in Rev.5? Why or why not?
Not even the most enlightened bible scholars can make a 100% clear
interpretation of Revelation. We can make educated guesses by interpreting
these visions of John by other scriptures, but we will never know with
certainty. So, all I can offer you is the best educated guesses I have.
The scroll with the seals is the beginning of the Tribulation on earth. Naturally, we are raptured off of this earth before the Tribulation begins. We will be in heaven, but whether we are there, watching these events unfold is hard to say. I can say that based on the verses in Rev.5, we (as the Body of Christ) are not referred to directly! Everything mentioned in this chapter is Jewish. Notice this passage:
Rev.5:9 And they sung a new song, saying, Thou art worthy to take the book, and to open the seals thereof: for thou wast slain, and hast redeemed us to God by thy blood out of every kindred, and tongue, and people, and nation; 10 And hast made us unto our God kings and priests: and we shall reign on the earth.
- Out of every kindred, and tongue, and people, and nation --is the regathering of the Jews who have been brought back OUT OF every nation and tongue.
- Kings and priests --are designations of Israel.
- We shall reign on the earth, --is the location inherited by the Jews.
All this is Jewish. Who these 24 elders are I cannot tell you. If we are
onlookers to these things, we'll never know, even though we will be in heaven
at this time.

It's hard to find US in Rev.12, unless we would be those rejoicing in heaven with the MANCHILD that has been caught up as well.
As with the above reply, we will never be 100% sure if those rejoicing in the
heavens in Rev.12 is us and a whole lot of angels. Since we are in heaven and
are about to be assigned our place in the heavens (with the devil cast out of
the heavens) it could very well be us rejoicing?! Another interesting verse in
Hebrews 12, which corresponds in timing with Rev.12, and is in regard to the
New Jerusalem descending out of heaven, has a reference to what seems to be us
the Body of Christ. The verse reads as follows,
Heb.12:22 But ye are come unto mount Sion, and unto the city of the living God, the heavenly Jerusalem, and to an innumerable company of angels, 23 To the general assembly and church of the firstborn, which are written in heaven, and to God the Judge of all, and to the spirits of just men made perfect,
- Ye are come unto mount Sion --is a reference to the manchild birthed by the woman (Israel) who are now in the New Jerusalem.
- And to the spirits of just men made perfect --the spirits of just men made perfect certainly sounds like us?!
